ABSTRACT

La leche materna donada es un recurso de alto valor que puede ser utilizado para la alimentación de neonatos hospitalizados y a término, por tanto, garantizar su inocuidad es imperativo. Esta revisión de literatura reúne los principales peligros de naturaleza física, química y microbiológica identificados en leche materna, con la intención de proveer una referencia que los consolide de tal forma que la información pueda ser utilizada por bancos de leche humana, gobiernos y agencias regulatorias para establecer mecanismos para su prevención y control. Se realizó una revisión de literatura entre agosto del 2021 y octubre del 2022, utilizando buscadores y descriptores específicos para peligros de transmisión alimentaria en leche materna. Se incluyeron estudios publicados en español o en inglés. Se identificaron 31 agentes biológicos patógenos incluyendo bacterias, virus y parásitos. Como peligros químicos se reportaron medicamentos, drogas, cafeína, infusiones herbales, micotoxinas, alérgenos, especias, suplementos nutricionales, contaminantes ambientales y desinfectantes. Se alerta sobre la presencia potencial de plástico y vidrio de tamaño menor a 7 mm proveniente del ambiente de extracción y recipientes. La presencia de peligros microbiológicos y químicos en leche materna puede darse por transmisión vertical, temperaturas inadecuadas durante el almacenamiento y contaminación en el proceso. La presencia de peligros físicos se relaciona con la manipulación de los implementos en etapas posteriores a la extracción. Se requiere prestar atención a los hábitos de la madre para prevenir peligros químicos, así como más investigación relacionada con micotoxinas en leche materna(AU)


Donated breast milk is a highvalue resource which can be used to feed hospitalized neonates and full-term infants, therefore, ensuring its safety is imperative. This literature review presents the main hazards of physical, chemical and microbiological nature identified in human milk, with the intention of providing a reference that consolidates the reported hazards reported, so the information can be used by human milk banks, governments and regulatory agencies to establish prevention and control mechanisms. A literature review was carried out between August 2021 and October 2022, using search engines and specific descriptors for foodborne hazards in breast milk. Studies published in Spanish and English were considered. 31 pathogenic biological agents including bacteria, viruses and parasites were identified. Medications, drugs, caffeine, herbal infusions, mycotoxins, allergens, spices, nutritional supplements, contaminants of environmental origin and disinfectants were reported as chemical hazards. No physical hazards were identified, however the potential presence of plastic and glass smaller than 7 mm from the extraction environment or containers is alerted. Presence of microbiological and chemical hazards can be due to vertical transmission, inadequate temperature of storing, contamination during extraction, packaging, and infant feeding. Whereas presence of physical hazards is related to implements handling after extraction. Attention to hygiene and habits of the mother to prevent chemical hazards and further research related to mycotoxins in human milk is required(AU)

ABSTRACT

Objective@# To investigate the contamination of foodborne pathogens in market-sold food in Fuyang District, Hangzhou City, so as to provide insights into intensified supervision of food safety and management of foodborne diseases.@*Methods@# A total of 1 176 market-sold food samples belonging to 11 categories were collected from Fuyang District from 2019 to 2022, and nine foodborne pathogens, including Salmonella, Vibrio parahaemolyticus and Yersinia enterocolitica, were detected according to the National Handbook for Surveillance of Risk of Food Contamination and Hazardous Factors in 2019 and national criteria for food microbiological testing. The detection of foodborne pathogens was analyzed in food samples with different categories and sources. @*Results@#Foodborne pathogens were detected in 332 out of 1 176 market-sold food samples, with a detection rate of 28.23%, and the detection rates of V. parahaemolyticus, Enterobacter sakazakii, non-O1/non-O139 V. cholerae, Y. enterocolitica, Vibrio vulnificus, Bacillus cereus, Staphylococcus aureus, Salmonella and Listeria monocytogenes were 39.47%, 36.92%, 35.48%, 34.09%, 13.85%, 12.26%, 8.58%, 6.65% and 2.53%. The detection rates of foodborne pathogens were 38.36%, 24.90%, 15.48%, 11.90%, 5.68%, 5.56%, 4.48%, 1.67%, 1.25% and 0.81% in aquatic food and its products, meat and meat products, local specialty food, catering food, flavoring, foods for special dietary uses, milk and milk products, egg and egg products, cooked food and other food, respectively, while foodborne pathogens were not detected in frozen drinks. In addition, the detection rates of foodborne pathogens were 24.97%, 15.19%, 9.88%, 7.89% and 7.23% in farmers' markets, supermarkets, online stores, vendors and restaurants, respectively. @*Conclusions@#A high detection rate of V. parahaemolyticus, E. sakazakii and non-O1/non-O139 V. cholerae was found in market-sold food in Fuyang District from 2019 to 2022, and the contamination of foodborne pathogens was serious in aquatic food and its products, meat and meat products and local specialty food.

ABSTRACT

Objective@#To investigate the epidemiological characteristics of foodborne disease outbreaks in Shaoxing City, Zhejiang Province, from 2012 to 2022, so as to provide the evidence for improving the foodborne disease control strategy. @*Methods@#Foodborne disease outbreaks in Shaoxing City from 2012 to 2022 were collected from National Foodborne Disease Outbreak Monitoring System in China, including populations, places of outbreak, pathogenic factors and suspected foods. The temporal distribution, regional distribution, distribution of outbreak places and pathogenic factors of foodborne disease outbreaks were descriptively analyzed.@*Results@#A total of 89 foodborne disease outbreaks were reported in Shaoxing City from 2012 to 2022, covering totally 699 patients, with an average annual attack rate of 6.35%. The outbreak peaked during the period between June and October (73 outbreaks, 82.02%), and family was the predominant place of outbreak (41 outbreaks, 46.07%). There were 83 outbreaks with known pathogenic factors, including 51 outbreaks caused by microbial factors, with Vibrio parahaemolyticus, Salmonella and norovirus as predominant pathogens, and 29 outbreaks caused by fungi and their toxins, which were all poisonous mushrooms poisoning, resulting in 2 deaths. In addition, there were 3 outbreaks caused by chemical factors. @*Conclusions@#The outbreak of foodborne diseases predominantly occurred in summer and autumn in Shaoxing City from 2012 to 2022. Family was the predominant place of outbreak, and toxic mushroom poisoning was the most lethal pathogenic factor.

ABSTRACT

ObjectiveTo learn the epidemiological features of foodborne diseases, and to provide scientific basis for disease control. MethodsThe monitoring data of foodborne diseases in Minhang from 2016 to 2020 were analyzed. Stool or swab specimens were collected to detect salmonella, Vibrio parahaemolyticus, Escherichia coli, Shigella, Campylobacter jejuni and norovirus. ResultsThe information of15 951 foodborne disease cases and 11 176 samples were collected, with the positive rate of 12.03%.The cases with diarrhea accounted for 99.90% of the total. The cases with fever accounted for 14.70% of the total. The cases with water stool accounted for 89.70% of the total. May to October were the epidemic periods of foodborne diseases in Minhang(79.78%). The detection rate was the highest in the 30‒39 age group and cadre staff occupation(13.53%,13.49%). The detection rates of foodborne bacteria and virus were 5.39% (Vibrio parahaemolyticus), 3.25% (salmonella),1.44% (norovirus), 1.06%(Escherichia coli), 0.56% (Campylobacter jejuni), 0.34% (mixed infection) and 0% (Shigella). During this 5-year period, the positive rate of Vibrio parahaemolyticus decreased significantly, while the positive rate of salmonella and Escherichia coli and Campylobacter jejuni increased significantly. The main suspected food were aquatic products (29.44%), meat (25.80%) and fruits (10.78%). The main processing methods of suspected food were family workshop (41.12%) and restaurants (37.55%). The total detection rate of the cases was the highest in the canteen, reaching 20.51%. ConclusionFoodborne disease cases have a seasonal peak. The positive detection of pathogens tends to be similar year by year. The main suspected food is aquatic products. The main resources of suspected food are family workshop, restaurants, and canteen. Targeted health education, supervision and management should be taken to prevent the occurrence of foodborne diseases and the outbreak of food poisoning

ABSTRACT

ObjectiveTo understand the serotype distribution and drug resistance of salmonella contaminated in commercially available food. MethodsSalmonella detection, including the serotypes, was conducted in food products sold in Pudong New Area from 2020 to 2022. The antimicrobial susceptibility test of 15 antibiotics was conducted by the broth microassay. ResultsA total of 118 salmonella strains were detected in 2 497 pieces of food, with a total detection rate of 4.7%. The dominant detection categories were poultry meat, livestock meat and aquatic products. The 118 salmonella strains could be divided into 24 serotypes, Salmonella enteritidis (26.4%), Salmonella Typhimurium (16.2%) and Salmonella delpy (14.4%) were the main dominant types. Salmonella had the highest resistance rate to ampicillin (63.6%), followed by tetracycline, chloramphenicol, cotrimoxazole and nalidixic acid. Among the three dominant serotypes, the multidrug resistance rate of Salmonella typhimurium was the highest (89.5%), followed by Salmonella delpy (70.6%) and Salmonella enteritidis (61.3%). ConclusionLivestock, poultry meat, and aquatic products are seriously contaminated by salmonella with diverse serotypes. The livestock meat is mainly contaminated by Salmonella typhimurium and Salmonella delpy, and the poultry meat is mainly contaminated by Salmonella enteritidis. The drug resistance spectrum is wide and the multi-drug resistance rate is high. Different from the livestock and aquatic isolates, poultry meat-derived strains have high tolerance to ampicillin, nalidixic acid and polymyxin, and carry certain potential food safety risks.

ABSTRACT

Objective To master the changes of foodborne disease pathogen spectrum in Yichang during 2014-2020, and to understand the impact of the toilet revolution on the pathogen spectrum of foodborne diseases in Yichang. Methods The basic information on the cases of foodborne diseases in Yichang from 2014 to 2020 was collected. The fecal specimens were collected to detect pathogens, including Salmonella , Vibrio parahaemolyticus, Shigella, and diarrheogenic Escherichia coli and Norovirus. The distribution of foodborne pathogenic bacteria in food was obtained from the surveillance project report of food microorganisms and their pathogenic factors in Yichang. From 2017 to 2020, water samples from the Yangtze River were collected from May to October with frequent intestinal diseases to detect pathogenic bacteria of foodborne diseases. Results The monitoring results of foodborne diseases showed that the detection rate of norovirus increased to 6.12% year by year from 2015 to 2017, and plummeted to 0.43% in 2018, with a statistically significant difference (χ2=60.962,P2=106.47,P2=44.036 , P<0.05). Conclusion The toilet revolution can reduce the detection rate of pathogens of foodborne diseases in Yichang and reduce the detection rate of Salmonella in Yangtze River water, but it has little impact on the composition of foodborne disease pathogen spectrum.

ABSTRACT

ObjectiveTo understand the epidemiological and etiological characteristics of food-borne diseases in Wenchang, Hainan Province, and to analyze the suspected food exposure sites and sources so as to provide scientific data for early prevention. MethodsThe data of food-borne disease cases, including basic information, time, population, region, suspected exposed food, etiology, etc., from the sentinel hospitals of the surveillance systems in Wenchang from 2017 to 2021 were statistically analyzed. ResultsA total of 2 219 food-borne disease cases were collected from 2017 to 2021. The male-to-female sex ratio was 1.2:1, and there was no significant statistical difference (χ2=5.732, P>0.05). Cases were mainly concentrated in children aged <7 years (43.26%), followed by 7 to 18 years (15.41%), 19 to 30 years (11.72%) and >60 years (11.36%), and there was a significant statistical difference (χ2=168.125, P<0.001). The highest number of cases were found in preschool children (36.05%), followed by students (17.49%) and farmers (16.18%). The peak incidence occurred from July to November (54.44%). The suspected exposure foods reported in the monitored cases were mainly vegetable foods (17.49%) and mixed foods (17.08%). The exposure sites were primarily households (76.30%) and catering services (13.56%). The positive rate of pathogens was 12.26% in 1085 tested samples, and there was no statistically significant difference in the annual detection rate (χ2=1.086, P>0.05). The main pathogens of food-borne pathogens were Salmonella (9.95%), followed by norovirus (2.03%) and rotavirus (0.28%). ConclusionThe surveillance of foodborne disease cases in Wenchang shows seasonal peak patterns according to population and pathogen epidemiological features. The main affected groups are preschool children, students, farmers, and the elderly. The exposures are mainly related to vegetable foods and mixed foods in households and catering service establishments. Efforts should be made to strengthen food safety awareness, health education, and supervision targeting residents and food operators in order to reduce the incidence of foodborne diseases in the Wenchang area.

ABSTRACT

ObjectiveIn this paper, the cause of an outbreak of foodborne disease in Huzhou City was analyzed, which may help avoid the recurrence of such incidents. MethodsThrough the field epidemiological investigation, the case definition was formulated and the questionnaire survey was carried out in the case group and the control group. In addition, the chi-square test and logistic regression method were used to identify the factors affecting the outbreak. The patient stool samples, food samples, environmental samples and water samples were collected and used for the laboratory test. The PFGE molecular typing was conducted on the isolated positive strains. ResultsThe number of people exposed during the same period was 410, and the number of possible cases was 18, with an incidence of 4.39%. Generally, the main symptoms were abdominal pain and diarrhea, accompanied by nausea, fatigue, fever and others. For case-control analysis, 17 of the 18 patients were included in the case group, and 19 non-patients were into control group. The results suggested that the risk factors were blanched deep-water shrimp(OR=19.42, 95%CI=1.06‒357.02, P=0.046)and steamed Ao Long (Australian lobster) with garlic and vermicelli (OR=22.01, 95%CI=1.24‒390.70, P=0.035). According to the laboratory test results Vibrio parahaemolyticus (VP) was positive in 5 cases, and the serum type was is O10∶K4. In the reserved food, VP was positive in the samples of steamed Australian lobster with garlic vermicelli and lamb chops. The serum type was O5∶Kut. ConclusionThis incident was an outbreak of foodborne disease caused by the consumption of wedding food contaminated by VP. The dinner was served by Hotel B on September 17. Moreover, the suspicious foods include the blanched deep-water shrimp and steamed lobster with garlic vermicelli.

ABSTRACT

ObjectiveTo investigate the monitoring status and epidemiological characteristics of foodborne disease pathogens in Baoshan District, Shanghai so as to improve early detection and warning capabilities of foodborne diseases outbreaks, and to provide a scientific basis for the prevention and control of foodborne diseases. MethodsAnal swabs or fecal samples from food-borne diarrhea cases were collected from two sentinel surveillance medical institutions in Baoshan District of Shanghai during 2019 and 2021. Salmonella, diarrheagenic Escherichia coli, Shigella, Vibrio parahaemolyticus, campylobacter and norovirus were tested in anal swabs and fecal samples, and all the testing results were statistically analyzed. ResultsA total of 1 693 cases were reported, among which 1 693 anal swabs and fecal samples were collected, with a male-to-female ratio of 1.04∶1. The largest number of cases was from the age group of 45-64 years (504 cases). The highest number of reported cases was among retirees (762 cases). The high-incidence period of the diseases was in summer and autumn, with the highest number of cases associated with meat and meat products (566 cases). The primary location of exposure was at home (1 260 cases). The detection rate of pathogenic bacteria and virus was 21.32%, among which campylobacter accounted for the largest proportion (10.28%). The peak incidence rate was from May to September. The detection rate of norovirus was 13.29%, with a higher incidence in winter and spring. The predominant serotype of Salmonella was Salmonella enteritidis (41.82%), and the predominant local serotype of diarrheagenic Escherichia coli was EAEC (50.52%). Campylobacter was mainly represented by jejuni (81.61%), and the predominant type of norovirus was GⅡ (60.87%). ConclusionCampylobacter has the highest proportion among foodborne pathogens causing foodborne diseases in Baoshan District, followed by diarrheogenic Escherichia coli. And norovirus GⅡ type is the predominant virus. Appropriate prevention and control measures should be taken based on the characteristics of each pathogen's epidemiology.

Objective@#To analyze the etiological characteristics of an outbreak of Campylobacter foodborne disease in a middle school in Suzhou City, so as to provide insights into the identification of pathogenic factors of Campylobacter foodborne disease outbreaks.@*Methods@#Eighteen anal swabs from patients, 10 anal swabs from canteen workers, 43 food samples, 2 drinking water samples, 2 food original material samples and 31 environmental samples were collected, and the pathogens were rapidly screened using the gastrointestinal infection detection strip. The pathogens were isolated and cultured using the double-pore filtration membrane method, and cluster analysis of bacterial isolates was performed using pulsed field gel electrophoresis ( PFGE ). In addition, the susceptibility of Campylobacter isolates to antibiotics was tested using the Campylobacter agar dilution method.@*Results@#A total of 63 cases with Campylobacter infections were reported, and the major clinical symptoms included diarrhea ( 51 cases, 80.95% ) and fever ( 39 cases, 61.90% ), while no inpatients or deaths were found. Twelve Campylobacter-positive samples were detected, including 11 anal swabs sampled from patients and one food original material sample. Among the 11 positive anal swabs, there were 10 samples positive for Campylobacter jejuni and one sample positive for C. coli, and of the one positive food original material, C. coli was identified. PFGE analysis showed that 10 C. jejuni isolates of had 100.0% homology, and these 10 isolates were 100.0% resistant to naphthyridic acid, ciprofloxacin and tetracycline, appearing multidrug resistance.@*Conclusions@#This is an outbreak of foodborne disease caused by C. jejuni infections. Gastrointestinal infection detection strips, double-pore filtration membrane and PFGE typing are rapid and accurate to identify pathogenic factors.

ABSTRACT

Aims@#Lactic acid bacteria (LAB) biofilms constitute one of the most remarkable breakthroughs in the field of food biopreservatives and can be employed to prevent foodborne disease. The purposes of this study were to investigate the efficacy of inhibitory LAB biofilms against foodborne pathogens and evaluate their tolerance to acidic pH and bile salts, as well as their physicochemical properties.@*Methodology and results@#Four strains of Lactobacillus brevis biofilms isolated from kimchi showed antipathogenic activity to the bacteria Staphylococcus aureus FNCC 0049 and Escherichia coli FNCC 0091. These biofilms were also tolerant to pH 2.5, 0.3% bile salt and strong adhesion. Two of the four L. brevis biofilms (L. brevis biofilm KA2 and KB1) produced the highest inhibitory activity against both pathogenic bacterial indicators, tolerance to acidic pH and bile salts, and the strongest adhesion. In addition, based on Scanning Electron Microscope-Energy Dispersion X-ray Spectroscopy (SEM-EDS) analysis, both biofilm strains had a smooth surface texture; the cell morphology was rod-shaped and consisted of several elements such as carbon, oxygen and nitrogen, which was built up of extracellular polymeric substances (EPS).@*Conclusion, significance and impact of study@#The presence of EPS as a constituent of LAB biofilms influenced their survival abilities in an acidic pH and bile salt environment. As a result, the characteristics of L. brevis biofilm KA2 and KB1 made them excellent candidates for use as antimicrobial packaging systems in food biopreservative applications.

ABSTRACT

ObjectiveTo analyze the epidemiological features of foodborne disease outbreaks in Shanghai and to find the risk factors. MethodsWe collected the data of foodborne disease outbreaks occurred in Shanghai between 2010 and 2020, analyzed the characteristics of outbreaks, including time and geographic distribution, pathogenic factors and possible reasons caused outbreaks. ResultsBetween 2010 and 2020, there were 108 foodborne disease outbreaks with 1 736 cases, 45 inpatient cases and 1 death. May to September was the epidemic period, with about 64.81% of the outbreak occurrence. 39.81% outbreaks occurred in Pudong, Songjiang and Chongming Districts. Most outbreaks occurred in small restaurants (25%) and most foodborne cases were in staff canteen outbreaks (27.53%). The main possible reasons caused outbreaks were improper food storage (19.44%), cross-contamination (14.81%) and improper cooking (12.04%). The major pathogenic factor was biological, caused 75.92% outbreaks and 77.59% cases. Methanol poisoning caused 1 death. The main contaminated food caused outbreaks was meat (17.59%), multiple food (12.04%) and aquatic products (11.11%). ConclusionThe foodborne disease outbreaks in Shanghai caused inpatient cases and death. We should pay more attention to foodborne disease outbreaks and we can control the risk factors by strengthening supervision and carrying out health education to reduce foodborne disease outbreaks.

ABSTRACT

ObjectiveTo investigate a foodborne disease outbreak and identify the pathogenic factors in order to prevent the occurrence of similar incidents. MethodsEpidemiological study, on-site food hygiene investigation, and laboratory testing were used to analyze the cause of outbreak in Company A. ResultsA total of 24 confirmed cases were screened out. The major clinical symptoms were diarrhea (100.0%), stomachache (100.0%), and vomiting (41.7%). Samples from 24 patients were tested positive for Vibrio parahaemolyticus, and were homologous by Pulsed field gel electrophoresis (PFGE) phylogenetic study. According to the result of case-control study, eating glass noodles salad at the dinner and supper on July 16th, 2019 was the risk factor (OR=15.71,95%CI:1.90‒129.71). ConclusionThis foodborne disease outbreak was caused by glass noodles salad cross contaminated with Vibrio parahaemolyticus.

ABSTRACT

Objective To analyze the infection status and epidemic characteristics of Vibrio parahaemolyticus diarrhea cases in Shanghai in recent years, and to explore its influencing factors and provide a basis for the prevention and control of Vibrio parahaemolyticus infection. Methods Food-borne disease surveillance data in Shanghai from 2017 to 2018 was collected, and the infection status and epidemic characteristics of Vibrio parahaemolyticus were analyzed. χ 2 test and multivariate unconditional logistic regression were used to analyze the factors of Vibrio parahaemolyticus infection. Results Among the food-borne surveillance cases in Shanghai from 2017 to 2018, the positive detection rate of Vibrio parahaemolyticus reached 5.1%, and the positive cases were concentrated in July, August, and September. Those working in the catering industry, migrant workers and workers, and the young and middle-aged people (19‒59 years old) have a high incidence. The results of multivariate analysis showed that dining in Qingpu, Songjiang or Minhang District, occupations of migrant workers and workers, age over 19 years old, the third quarter of a year, and the consumption of aquatic animals and related foods are risk factors for Vibrio parahaemolyticus infection. Conclusion The infection of Vibrio parahaemolyticus in Shanghai is still one of the food-borne diseases that warrant our attention. Strengthening food safety management and supervision, and promoting publicity and education for key populations are important for reducing the risk of infection by this pathogen. At the same time, long-term monitoring of infectious diarrhea cases in this city is necessary to dynamically understand the infection and epidemic characteristics of Vibrio parahaemolyticus , and adjust the annual prevention and control measures in time.

ABSTRACT

Objective To analyze the infection status and epidemic characteristics of Vibrio parahaemolyticus diarrhea cases in Shanghai in recent years, and to explore its influencing factors and provide a basis for the prevention and control of Vibrio parahaemolyticus infection. Methods Food-borne disease surveillance data in Shanghai from 2017 to 2018 was collected, and the infection status and epidemic characteristics of Vibrio parahaemolyticus were analyzed. χ 2 test and multivariate unconditional logistic regression were used to analyze the factors of Vibrio parahaemolyticus infection. Results Among the food-borne surveillance cases in Shanghai from 2017 to 2018, the positive detection rate of Vibrio parahaemolyticus reached 5.1%, and the positive cases were concentrated in July, August, and September. Those working in the catering industry, migrant workers and workers, and the young and middle-aged people (19‒59 years old) have a high incidence. The results of multivariate analysis showed that dining in Qingpu, Songjiang or Minhang District, occupations of migrant workers and workers, age over 19 years old, the third quarter of a year, and the consumption of aquatic animals and related foods are risk factors for Vibrio parahaemolyticus infection. Conclusion The infection of Vibrio parahaemolyticus in Shanghai is still one of the food-borne diseases that warrant our attention. Strengthening food safety management and supervision, and promoting publicity and education for key populations are important for reducing the risk of infection by this pathogen. At the same time, long-term monitoring of infectious diarrhea cases in this city is necessary to dynamically understand the infection and epidemic characteristics of Vibrio parahaemolyticus , and adjust the annual prevention and control measures in time.

ABSTRACT

Objective To understand the epidemiological characteristics of foodborne disease outbreaks in Zhaotong City of Yunnan Province from 2010 to 2019, and to provide a scientific basis for the prevention and control of foodborne disease outbreaks in Zhaotong City. Methods Data were collected from National Foodborne Diseases Surveillance Network during 2010-2019, and a descriptive analysis of the data was carried out. Results A total of 82 foodborne disease outbreaks were reported from 2010 to 2019, involving 2 060 cases and 40 deaths. In 2016, there were 12 (accounting for 14.63%) foodborne disease outbreaks. Foodborne disease outbreaks displayed seasonal pattern, and mainly occurred from July to October. Families were the main places of foodborne disease outbreaks, accounting for 63.41%. Poisonous mushroom was the main food for outbreaks, which caused 39 outbreaks of foodborne diseases (accounting for 47.56%). Twenty-six people died from eating wild mushroom, accounting for 65.00% of the total deaths. Drinking and eating by mistake were the main cause of the disease, leading to 47 cases (57.31%). Conclusions Summer and Autumn are the high-risk seasons for foodborne disease outbreaks in Zhaotong City. Eating and drinking by mistake are the main cause of the disease, and eating poisonous mushroom is the predominant reason. It is necessary to strengthen food safety education, to improve food safety awareness, and to strengthen the supervision of food safety in collective canteens and issue early warning intervention in time in the season of high incidence of foodborne diseases.

Resumen La anisakidosis es una zoonosis parasitaria accidental y cosmopolita de los seres humanos, siendo su hospedero definitivo los mamíferos marinos como lobos de mar, focas y delfines, entre otros. El ser humano se infecta por el consumo en estado larvario del nemátodo de la familia Anisakidae presentes en pescados y mariscos crudos como la merluza o el congrio. Los helmintos se ubican preferentemente en el tubo digestivo alto, observándose la regurgitación del parásito a la boca o evidenciándose durante la realización de una endoscopía digestiva alta. En forma infrecuente las larvas pueden migrar al peritoneo o seguir su paso por el intestino delgado y colon, siendo inhabitual la expulsión por las deposiciones. Presentamos el caso de una expulsión dos larvas L3 de la familia Anisakidae en deposiciones.


Abstract Anisakidosis is an accidental and cosmopolitan parasitic zoonosis of human beings, its definitive host being marine mammals such as sea lions, seals and dolphins, among others. Humans are infested by consumption in the larval stage of the nematode of Anisakis present in raw fish and shellfish such as hake or conger eel. The infestation is preferably located in the upper digestive tract, observing the regurgitation of the parasite to the mouth or becoming evident during an upper gastrointestinal endoscopy. In rare cases, the larvae can migrate to the peritoneum or continue their passage through the small intestine and colon, with expulsion in stools being unusual. We present a case of expulsion of two larvae of the Anisakidae family in feces.

Resumen Introducción: El bivalvo Aulacomya ater (cholga), es uno de los moluscos de mayor consumo en la población chilena. Sin embargo, existe evidencia de contaminación fecal hídrica provocada por los cauces que llegan al mar, aumentando la probabilidad de contaminación por Cryptosporidium parvum, el que genera criptosporidiosis en el ser humano. Objetivo: Determinar la presencia de C. parvum en cholgas extraídas desde la Región del Bío Bío (Chile). Material y Métodos: Se seleccionaron 55 cholgas provenientes de un centro de cultivo y de un banco natural de extracción. Estas muestras, fueron procesadas en el laboratorio y se evaluó la presencia de elementos ácido-alcohol resistentes. Las muestras positivas, se analizaron por inmunofluorescencia directa, con anticuerpo específicos contra C. parvum. Resultados: 16,4% del total de las muestras tenían ooquistes de C. parvum. Conclusiones: Por primera vez se describe C. parvum en A. ater provenientes de las costas chilenas, siendo este molusco un posible vehículo de transmisión de criptosporidiosis a la población y a sus animales depredadores. Además, la presencia de C. parvum refleja la contaminación fecal hídrica en las costas evaluadas. Actualmente estamos monitoreando otras zonas de extracción de este molusco.


Abstract Background: The bivalve Aulacomya ater (cholga), is one of the most consumed mollusks by the population. However, there is evidence of fecal water contamination caused by causes that affect the sea, increasing the probability of contamination by the Cryptosporidium parvum, which generates cryptosporidiosis in people. Aim: To determine the presence of C. parvum in cholga extracted from the Bio Bio Region (Chile). Methods: Fifty-five cholgas were selected from a cultivation center and a natural extraction bank. These samples were processed in the laboratory and the presence of acid-alcohol resistant elements was evaluated. Positive samples were analyzed by direct immunofluorescence with anti-C. parvum antibody. Results: 16.4% of the total samples were affected by the oocysts of C.parvum. Conclusions: For the first time we described C. parvum in A. ater from the Chilean coast, being this mollusk a possible vehicle for transmission of cryptosporidiosis to the population and their predatory animals. Furthermore, the presence of C. parvum reflects fecal water contamination on the evaluated coasts. We are currently monitoring other extraction areas for this mollusk.

ABSTRACT

Introduction@#Foodborne diseases are a major public health concern worldwide. The report, which estimates the burden of foodborne diseases – states that each year as many as 600 million, or almost 1 in 10 people in the world, fall ill after consuming contaminated food. Of these, 420 000 people die, including 125 000 children under the age of 5 years. The 20.3% of diarrhea and 27.5% of die caused by contaminated foods are diarrheagenic Escherichia coli (DEC).@*Aim@#To identify of DEC and determine their antibiotic resistance from ready-to-eat salads@*Material and Methods@#A total of 40 bagged salad mix samples were collected from food markets in Ulaanbaatar, Mongolia. Escherichia coli (E.coli) strains were determined on the basis of MNS 6308:2012 standard and confirmed by polymerase chain reaction (PCR) in samples. DEC was identified using multiplex PCR. Bacterial susceptibility to antimicrobial agents determined by the Kirby Bauer disk diffusion method.@*Results@#Our results showed the presence of E. coli in 19 samples (47.5%). DEC isolates identified by multiplex PCR were defined as follows: the presence of eae and bfp for EPEC, the presence of lt for ETEC, the presence of ipaH for EIEC, the presence of stx1 and stx2 for EHEC, the presence of aap and aggR for EAEC, and the presence of daaE for DAEC. The multiplex PCR assays detected EHEC 6 (31.6%), EPEC 5 (26.3%), EIEC 1 (5.3%). EAEC and ETEC were not detected in samples. The E.coli isolates were 73.7% resistant to chloramphenicol as the first choice of treatment of diarrhea and high resistance (68.4-94.7%) to the cephalosporins. In our country, cephalosporins are widely used in medical practice for the treatment of infectious diseases.@*Conclusion@#In this study, about half of ready-to-eat salads are contaminated with E. coli. The three types (EHEC, EPEC, EIEC) of DEC pathotypes were identified in the ready-to-eat salads and high prevalent of antimicrobial resistance. Future research is required to track the contamination sources and develop appropriate steps that should be taken by industry and retailers to reduce microbial contamination in ready-to-eat salads.

Introduction@#In the United States, Staphylococcus aureus (S.aureus) is considered one of the top five pathogens causing domestically acquired foodborne diseases and is responsible for an estimate of 241,000 illnesses per year. Foods that have been frequently implicated in Staphylococcal food-borne disease are meat, meat products, egg products, milk, dairy products, salads and bakery products. β-lactam antibiotics are routinely prescribed for treating S. aureus caused infections, but antibiotic resistance is increasing at an alarming rate.@*Aim@#Detection of virulence factors and antibiotic resistance in S.aureus isolated from retail beef@*Materials and Methods @#A total of 100 meat samples were collected from markets including Kharkhorin 28, Bars 4, Bayanzurkh 15, Huchit shonkhor 33, Denjiin myanga 4 and Bumbugur 16. S.aureus strains were determined on the basis of MNS 6308:2012 standard using Baird-Parker selective agar and confirmed by polymerase chain reaction (PCR) in retail beefs. Bacterial susceptibility to antimicrobial agents determined by the Kirby Bauer disk diffusion method.@*Results@#Overall, 81% meat samples were contaminated with staphylococcal of which 54.3% were low, 28% were moderate, 11.1% were high and 6.1% were very high. PCR amplification of the thermostable nuclease-encoding nuc gene using the gene-specific primers and the chromosomal DNA preparation yielded a 270 bp amplicon, as expected and 35 (43.2%) confirmed as S. aureus. According to the findings of the current study, S.aureus strains isolated from the beef were high resistant (88.6% -97.1%) to antibiotics of penicillins group and low resistant (8.6%) to chloramphenicol. In total, 48.6% of isolates were multidrug resistant.@*Conclusion@#The contamination of staphylococcal was high in retail beef in Ulaanbaatar. Most S.aureus isolates exhibited resistance to a antibiotics of penicillin group. The half of the isolates were multidrug resistant and high virulence.
